A Moderate-Salicylate Eggstatic Dish!

Ingredients:

1. 10 large eggs
2. 2 big onions
3. Sunflower oil
4. Sea-salt
5. Brown sugar

*Do wash all your eggs after purchasing them and store them in the fridge.

1. Break all 10 eggs in a large bowl. Add sea-salt and sugar to taste. Beat the eggs well.

2. Slice the big onions into thin slices.

3. Add the onions into the beaten eggs.

4. Heat wok.

5. Add about 3 tablespoons of sunflower oil to the heated wok.

6. Pour the beaten eggs concoction into wok and fry until eggs are fully cooked.

7. Scoop up onto serving bowl.

8. Serve warm.

Bon appétit!


I had my egg-static dish with minced chicken+potatoes and broccoli+carrots.  And RICE of course!

  2. Eggs have always been my favorite food. I could eat them all day long. I notice in many of your recipes you have eggs as a side dish. Nice. In US culture they are kinda limited to a breakfast meal as the main dish, unfortunately. Doesn't matter to me - I eat them whenever I want!

  3. Hi Evelyn, great recipe. I will have to try this one. You could also make it low salicylate by substituting leek for the onions if you can get them.
