Chilli Chicken


IMPORTANT NOTE: This dish is very high in salicylates!


Ingredients:

1. 5 red chilli pepper (seeds removed)
2. 1 garlic clove (skin removed)
3. 10 shallots (skin removed)
4. 6 large old potatoes (skin peeled and cut into chunks)
5. 8 drumsticks (with skin) (seasoned with sea-salt)
6. Sea-salt
7. 2 cups of chicken broth
8. Sunflower oil

1. Blend the red chilli pepper, garlic and shallots together until they form a paste. Set aside.

2. Heat a wok on high heat.

3. Drizzle some sunflower oil.

4. Once the oil is heated up, add the potatoes and cook until browned. Scoop up and set aside.

5. Heat a clay pot on medium heat.

6. Drizzle some sunflower oil.

7. Then add the blended paste and stir it continuously until a fragrant aroma wafts from the mixture and it has turned into a darker shade of colour.

8. Add the drumsticks, cooked potatoes and chicken broth.

9. Turn to low heat and allow to simmer for about an hour.

10. Scoop up onto serving dish and serve hot with rice.

PS: I could only take about two spoonful of this dish. This is a major GERD trigger for me. Two spoonful is better than none!

It looks like the garden has an iron will to live and to thrive even though the weather has been crappy and I've not been able to give it the love and attention it needs.

ONE Year of Container Gardening




It was during this time last year that I decided to start a container garden. I had actually thought of it as a 'holiday project' for my son and I to spend the school holidays together. Little that I know that it would turn into a little garden that would feed our tummies over and over again.

I am glad that I started this 'little' project as the vegetables are so different from the ones that are bought from the supermarket. Even the organic vegetables that are bought from the organic mart lose hands down to the vegetables from my garden. The taste, smell and texture of the vegetables from the garden is just...... Errrrm, there's just no words to describe it! Nothing can be compared to it. It's just super-delicious-yummy-to-the-tummy-now-you-see-it-now-you-don't-'cos-I-just-finished-the-whole-bowl! And my vegetables do not burn my mouth or give me Hades-inducing-allergy-migraines.

So to celebrate the anniversary of our mini container gardening, the heavens are rewarding us with..... non-stop rain! Days of it! It even rained 5 times a day 1 week ago! Now we can't complain about the 'showers of blessings' right? Hehehe... It's definitely time to move those containers under the shade!

This Week's Vegetable Harvest From the Container Garden

The weather has not been good for the vegetables for the past two weeks. It has been raining over here quite frequently as the year is coming to an end. The monsoon season will be here soon. Here's a summary of what is happening in the container garden.

The okras have been doing really great. Just this week alone, I managed to fill up 2 plastic containers with just okras.



The leafy vegetables were doing ok too, I guess. When I harvested them, the soil was quite wet. And the fungus ngats were having a party!

My broccoli bolted as the weather for the past 4 months were too hot. And broccoli being a cool weather crop did not do well at all in this weather. I was really looking forward to home grown broccoli.

The broccoli stems. I harvested the soft ones and threw the 2 bolted plants away. 
 I sliced them thinly
I added thinly sliced carrots and garlic
Lightly stir fried with sunflower oil and voila, a simple vegetable dish!
