Very-High-Level-Salicylate Home-Made Pizza

Ingredients:

For pizza topping:

1. Traffic-light colored (red, yellow, green) capsicums (3) - very high in salicylate
2. 3 large tomatoes - very high in salicylate
3. 1 big onion - moderate in salicylate
4. 200g fresh mushrooms - moderate in salicylate
5. 200g minced chicken (marinade with sea-salt)
6. 1 teaspoon sea-salt
7. 2 tablespoons sunflower oil

For pizza base:

1. 500g organic high-protein bread flour
2. 1 packet of instant yeast
3. Sea-salt
4. Brown sugar
5. 1/2 cup sunflower oil
6. 1 cup of warm water

1. Before you prepare the pizza topping, prepare the base first.

2. Pour the pizza base ingredients into a large bowl and mix them thoroughly.

2. Sprinkle some flour on the counter top and knead the dough until smooth.

3. Place the dough back into the large bowl, cover with a damp cloth and leave aside for about 2 hours for it to rise. (While waiting for the dough to rise, cook the pizza topping)

4. Knock the dough back down and knead again for about 5 to 10 minutes.

5. Divide the dough into 4 balls.

6. Roll the balls flat with a roller.

1. Wash the capsicums and tomatoes.

2. Slice the capsicums into thin slices and cut the tomatoes into 4 quarters.

3. Slice the big onion and fresh mushrooms into thin slices.

4. Heat the wok or pot and pour the sunflower oil into it. 

5. Add the capsicum and big onion and fry until slightly soften. 

6. Add the minced chicken, tomatoes and mushrooms and fry until chicken is cooked and vegetables are softened. Season with sea-salt. Stir again. 

7. Set aside.

1. Preheat oven at 210C.

2. Add the cooked toppings onto the pizza base.

3. Cook for 25 minutes or until slightly browned.

4. Allow to slightly cool before serving.

I also made a sea-food pizza!

If you can tolerate cheese, you can sprinkle some cheese over the pizza topping just before baking it. Mine was cheese-free.

The Container Garden - An Update

My one-year-old lemon tree has been very out of shape. I trimmed it and it looks VERY neat now!

I sowed six corn seeds but only two sprouted. And one of them died after sprouting. The weather was just too wet. Only this survived. I hope it is sweet.

I had to harvest them while they were still green as fruit flies were all over the place! I placed them in a container and let them ripen at room temperature.

This is a WEED, but it has beautiful, tiny yellow flowers. Does anybody know its name?

I've chopped down all the okra, tomatoes, capsicums and chilli plants as they have all caught viral diseases and fungus infections due to the excessive rain every day. I added compost to all the soils and am PATIENTLY waiting for the rainy weather to be over. Hopefully next year will be a greater year where the vegetable harvest is concerned! :)

Container Garden - An Update


The weather here has been very wet. It has been raining everyday. And on certain days, it even rained a few times a day. And sometimes, ALL DAY! And the rain has brought out the snails in full force. The picture below is a day's worth of catch.

As if the vegetables weren't enough, this one decided to 'chomp' on the broom as well!
The rain has caused many of the older tomato plants to contract fungus. And the spider mites have been causing havoc for the okra plants.
This tomato plant contracted fungus and died as a result of it. I managed to harvest all of the tomatoes before the plant died.

The damp and wet weather caused powdery mildew to infect the okra leaves too.

There were some good harvest too. Below is the 2nd harvest of the Kangkung vegetable.

 Below are some of the new vegetables/plants that I have been growing.

And I left this tray of red spinach to bolt as I wanted the seeds. By doing this, I do not need to buy seeds.

Day Seven & Day Eight

DAY SEVEN

Well, finally it was the last day of the salicylate-free diet. But I started having flu-like symptoms and it is not very good news to me. No medicines and just good food to fight the virus does not sound very comforting. I made baked fish, stir-fried lettuce vegetable with garlic, salt and sunflower oil and steamed beancurd. Sorry to say that there are no pictures as I was really down and out. And I just crashed in bed the whole afternoon and evening.

DAY EIGHT

I made chicken soup with carrots, home-grown tomatoes, celery and potatoes to fight this bug which is trying to wear me down. After yesterday's '40 winks' which turned into 4 hours, I had felt better. But today, I felt as though I had been run over by a steam roller. Thus, tonight will be an early night for me. Goodnight! And may the sleep help my immune system!
