Fried Bitter Gourd, Eggs & Minced Chicken Dish

Ingredients:

1. 1 bitter gourd (de-seed and sliced into thin slices)
2. 500gm of minced chicken (marinate with sea-salt)
3. 4 large eggs (beaten)
4. Sea-salt
5. Sunflower oil

1. Heat a wok/frying pan on high heat.

2. Pour about 3 tablespoons of sunflower oil onto the wok/frying pan.

3. On medium heat, stir fry the chicken until 90% cooked.

4. With the back of the spatula, break the minced chicken into fine pieces.

5. Add the bitter gourd and beaten eggs.

6. Season with sea-salt.

7. Keep frying and stirring until the eggs are cooked and the bitter gourds have softened.

8. Once done, scoop up on serving dish.

9. Serve warm with rice.
