Flourless Thermomix Cashew Bread

1. 385gm cashew flour
2. 1/2 teaspoon of baking soda
3. 1/2 teaspoon of salt
4. 3 eggs (yolks and whites separated)
    - egg whites beaten until stiff peaks are formed
5. 120gm plain yoghurt
6. 80gm apple juice

1. Place salt, baking soda and cashew flour into TMX jug and set 5 seconds and set speed 6.5.

2. Add egg yolks, yoghurt and apple juice to the flour mixture. Knead for 30 seconds.

3. Fold the egg whites into the batter.

4. Bake 150C for an hour. (I added 10 mins at 180C to get the golden brown finishing touch.)

Bon appetit!

  1. OH that looks so yummy!!!!!!!!!!!!!! Is it? Please include a mouth-watering description of HOW it tastes for those of us who would like to live vicariously through your Thermomix baking adventures. :)

    1. It was delicious. A very delicious nut cake. The combination of the cashews and the yoghurt gave it a very wonderful flavour. It was also sweet from the apple juice (I used the Thermomix to blend the apples). The aroma of the cake was heavenly. Imagine no sugar and gluten. Hehe...

  2. OH!!!! I made it! It's wonderful! Unfortunately...I'll be eating too much of it. I did bake it in a bigger pan because there seemed to be so much batter I didn't think it would work in a smaller loaf pan. Next time I'll make it in a smaller pan. And I take it you greased the pan so it wouldn't stick?

    Thanks for sharing this recipe!

    1. Congrats!!!! YAY!!!! Healthy indulgence is ok! Pig out away. Hehe....

I used baking paper. Somehow even when I grease the pans, they always get stuck. I've given up on greasing pans.

    2. OK, I used coconut oil and it was OK, but some of the sides still stuck.
